for gathering but the variety of foods which
small farmers offer, from free-range chickens
to water buffalo cheeses, makes for some great
eating.  Farmer’s markets and food coops make
buying locally grown produce  a win-win scenario.  The buyer gets fresh food
and can be assured of how it was grown and treated and the seller is
encouraged to continue and expand.   Plus, dollars spent locally, stay local.  

This cookbook puts forth a challenge to eat “outside the box;” changing familiar
recipes to conform to using local products, reviving historic recipes, and
creating completely new recipes to celebrate awareness of the environment.

Portions of the profit of this cookbook will help support conservation projects
developed by the Ottauquechee Natural Resources Conservation District.
