Notes from the Heart...

Despite my Irish last name, I'm not a wee bit Irish (although my husband is 100%
Irish, both parents hail straight from the Emerald Isle). I do love St. Patty's day,
although I'll pass on the green beer.  I make my usual
Corned Beef & Cabbage
recipe, and maybe I try some
Irish breads.  And the kids always want a cupcakes
with green frosting (sorry, don't have a recipe for that -- I'll admit, I make it out of
a box!)  However you celebrate St. Patrick's day -- Éirinn go Brách!  (that's Gaelic
for "Ireland Forever"...
uh... I looked that up on Google  :)  Marcia Duffy.

The Rocks Estate, Bethlehem, NH
Last three Saturdays in March 15, 22, 29, 2008

Get your sweet tooth ready! Maple sugaring marks the end of
a long New Hampshire winter and brings bright thoughts
of spring. Join us to hear the legend of how maple sugaring
began, why sap flows, and how to ID a tree. This year
The Rocks has teamed up with world-famous Polly's Pancake
Parlor to offer a new twist to the popular educational program.
Besides enjoying horse-drawn wagon rides, tapping their own
sugar maples, and learning about the age- old tradition of
maple sugaring, participants in the program this spring will also be invited to
savor the taste of Polly's delicious waffles, which will be cooked on site, with
mixes available for sale. See how syrup is made, learn about the history, basic
tree identification techniques, and the economic importance of natural maple
products. Horse-drawn wagon rides, warm syrup, donuts and infamous pickles
and more!  The maple program is scheduled for March 15, 22 and 29 with tours
taking place throughout the day. For more information visit
or call 603-444-6228.
