Recipe: Chicken Thighs Poached in Olive Oil

Chefs have started poaching fish, especially salmon, in olive oil at low
temperatures, and I found a fillet I prepared that way to be amazingly moist, so I
decided to try poaching chicken at low temperature in olive oil. I have done a
recipe for chicken thighs seared and then oven roasted for this column, and this
high temperature recipe gave excellent results, but the moist tenderness of the
poached thighs and their intense flavor were remarkable.

Thanksgiving Farm Fair
Stonewall Farm, Keene, NH
Saturday, November 17, 2007
9 a.m. to 3 p.m.

The annual Thanksgiving Farm Fare at Stonewall Farm, Keene, NH, will feature
up to 30 vendors, offering top-quality, locally-produced products and
ingredients for Thanksgiving feasts as well as handmade crafts from local
artisans.  Each year the farm hosts the Fare to support local agriculture and
encourage people to buy locally-produced food and other products.  This event
draws visitors from five states to sample the “taste of the farm,” including
artisan breads, organic vegetables, home-made desserts, local cheeses, jams and
jellies and many other specialty food products.  Juried traditional crafters also
will have products available to help you get a jump on the holiday season!
