Note from Charlie: I have two books by Lorna J Sass: Cooking Under Pressure and Great
Vegetarian Cooking Under Pressure, both published by Morrow in 1989 and 1994,
respectively. Books this age are frequently available from private sellers through Amazon

has a new one listed. New books will probably address the new generation of pressure
cookers, but I have not seen the need to update because all the essentials are in my two

Recipe: Herb Infused Roasted Chicken

Many recipes spread herbs and flavorings on the chicken skin, but these do not
penetrate the meat. When herb flavored olive oil is rubbed directly onto the
meat, however, it richly flavors it and forms another layer beneath the skin to
help preserve moisture during high temperature roasting.

The Great Maine Apple Day celebrate the
history, flavor and tradition of Maine
apples.  Apple experts say that this year
is the best apple crop in the past 30 years...even trees that have not had fruit in
decades have big ripe juicy apples.  This bumper-crop year also may offer the
best chance for locating and identifying lost apple varieties.  Great Maine Apple
Day attendees can bring fruit from their neighborhoods to be identified by
resident apple experts.
See Maine Organic Farmers & Gardeners Association
(MOFGA) list of heritage apple varieties currently sought by apple experts and
enthusiasts. MOFGA also maintains a beautiful and diverse Heritage Orchard
with 25 varieties of apples at its Common Ground Education Center. The
orchard will be open for tours during the Great Maine Apple Day. More
information about MOFGA's Heritage Orchard. Admission is $4.00 for the
general public, and $2.00 for members of MOFGA or the Maine Pomological
