Notes from the Heart...

Not everyone is enamored by the sweet/sour taste of rhubarb in recipes (that
requires a lot of sugar to counterbalance the tart rhubarb taste).  But I love it.
But before we moved to our New Hampshire home over a decade ago I barely
knew what rhubarb looked like, never mind pick it and use it in a recipe.  The
former owner of our home (and, by the way, the only owner of the house built
in 1932) must have had a remarkable passion for rhubarb because it was placed
in conspicuous locations throughout the yard, like prized ornamental flowers.

"I found out about The Heart of New England while searching for an authentic
New England Recipe and haven't left the site yet. I love it. I love what it's about
(so far) and love that you've kept it quaint, not too busy.  Keep up the good
work and thank you for the warm welcome." ~ Lisa I.

"I am a Japanese who lives in the greater Tokyo metropolitan area.  I used to
work in Boston, MA...Through my life there I developed deep understanding of
the historical and cultural, both overt and covert, aspects of New England.   I
was particularly impressed by the fact that an old-fashioned tradition is still
highly valued in the people's way of life. I'm an admirer of New England
nature, like Robert Frost and Tasha Tudor, and was a frequent traveler to the
farmer's market stands.  I read the article about
New England heirloom apples
with great interest and am really looking forward to further deepening my
understanding of New England and its people. ~ Mami (Japan)

"I enjoyed looking through your
picture gallery this afternoon.  Vermont is the
most beautiful place -- heaven on earth.  New England still calls to us and
maybe someday we will return." ~Millie (GA)

This Week's Recipe

Chicken Tagine (with spring onions, lemon, lemon thyme & olives)
By Charlie Burke
“Tagine” refers both to the cooking vessel and to the food prepared within it.
Made of either plain or glazed terra cotta, tagines are composed of a flat three to
four inch deep bottom with a lip and a conical cover which fits tightly within
the lip. They are found in every Moroccan kitchen and are passed down from
mother to daughter. Most prefer the unglazed version, believing the flavors of
the spices used in this cooking season the tagines. Recently, tagines have
become popular here and in Europe.
