Curried Cheese Crackers

3/4 cup all purpose flour
1 teaspoon salt
2 teaspoons curry powder
1 cup grated sharp cheddar cheese
1 cup grated Parmesan cheese
1/3 cup butter, room temperature

Preheat oven to 350 degrees.  

Lightly grease baking sheets.  Sift
flour, salt and curry powder into a small
bowl.

Pulse cheese and butter in a food processor
to combine.

Add flour mixture and pulse until all ingredients
are incorporated.

Divide dough into two pieces.  Roll each piece into
a 2-inch log; wrap with plastic and refrigerate for
at least 30 minutes.

Cut into 1/8 inch slices and place on prepared
baking sheet.

Bake for 10-15 minutes or until lightly brown.

Cool crackers for 5 minutes before transferring to a
wire rack to cool completely.
