Blueberry Fritters
Submitted by the Coach Stop Inn
Bar Harbor, Maine

1 Cup All Purpose Flour
1 ½ Tsp. Baking Powder
3 Tbl. Powdered Sugar
1/4 Tsp. Salt
1 Tsp. Cinnamon
1 Tsp. Vanilla Extract
1/3 Cup Milk
1 Egg Each
1/2 Cup Frozen Wild Maine Blueberries
To Taste Pure Maine Maple Syrup

Mix all dry ingredients. Add milk and
vanilla to egg and beat well, slowly stir
into dry ingredients.

When batter is smooth, fold in
blueberries until mixed evenly.

Drop 2 oz. scoops slowly into 360 degree
vegetable oil, and cook until golden
brown.

Remove fritters and drain off any excess
oil. Serve with a generous portion of
warm Maine maple syrup.
