Banana Oat Waffles (Vegan)
Recipe by:  Inn at Buck Hollow Farm,
Fairfax, Vermont

Oats have a unique protein that is equal in
quality to soy protein. Just one cup of oat
cereal has 26g of protein in addition to 17g
of fiber, which improves cholesterol levels.
Don’t have a waffle iron? This recipe is
good for making pancakes too. Also  good
for diabetics, lactose intolerant and those
with egg allergies.

1 ripe banana, mashed

milk)

over night..

mixture. Add remaining ingredients and
mix, leaving some lumps in the batter. Add
remaining ingredients and mix, leaving
some lumps in the batter. .

Cook on a waffle iron, according to the
manufacturer’s instructions
(Note: The batter also works for pancakes).
